Open your vent covers and run your fantastic fans at night. This will pull the condensation out of your rig and fix that problem. Being from Arizona and not having to deal with humidity it took us a couple of years to figure out the condensation problem.

Be sure to run your fantastic fan while your wife is cooking, and when showering. A/C should help pull moisture out of the air inside the rig. If you're using propane to cook and heat your rig you wil get lots of extra moisture inside the rig. Venting and maybe the dehumidifier seem to be necessary.

I had a similar problem on a previous HR Imperial. I put a small fan between the front curtains and the windshield to move air around after we closed the curtains. With the windshield not being dual pane, frost would form at the very top and then drip onto the dash. The fan moving the air around solved our problem. We were in 5 degree weather too!
