You didn't indicate whether the service included a fuel filter change. My first reaction is to blame the problem on fuel restriction. Maybe?
By all means contact the servicing dealer and have them check things out. It doesn't appear to be coincidental.

Possibilities They could have goofed up the throttle position? If the air filter was changed or cleaned, there could be an improper installation with restriction?
If they have a diagnostic tool, it should read any errors. If they don't, perhaps you should have Cummins check it out, it's warranty work.
I wouldn't take off on the freeway until you have identified the problem.
