We have a 05 inspire, are currently in lv nv and the air conditioners shut down. Should the air work even if it is 115?

Yes they should work. That's when they must work, right. To my knowledge there is no automatic shut down for high ambient temperatures built into the a/c units.
Someone may be of assistance if you can be more specific. Are you plugged into 50 amp shore power or operating with the generator on? Are your 110v breakers tripped? Will one unit operate independent of the other?
A little more info and I?m sure you will receive some helpful suggestions.

Check your power disconnect at the door. If it is off it shuts down the thermostat and the A/C quits.
