You might want to validate a few of the key functions:
1) Do a diagnostic to ensure the control board is behaving properly. (I'll look for it later, but if you Google norcold 1200 + diagnostics, you should find the link to how to do this.)
2) Paper dollar, or a twenty if your feeling lucky! Close the door with a bill in at different parts around the door, and test that you have good resistance via the gasket seal pressing the bill into the frame.
3) When was the last time you had the LP Burn Chamber serviced? (If this is on LP vs plugged into shore power.)
The fans have thermocouples that dictate when they should turn on. Did the installer retain the older units, or add new ones along with the cooling unit install?
Those are the items that come to mind, but others have much more experience then I do with these things - suspect you'll get other good advice.
I also called and asked for help, as my fans were never seeming to turn on, and the gent (memory fade, but I believe it was David Force) that sold me my Amish Cooling Unit - was very nice and concise on walking this rookie thru the process to pin point a bad fan install by the tech's that helped me with my unit. Never hurts to make a call.
