Michael, Baking Soda could be beneficial as it is basic and the gray/black tank solution are acidic. 20 Mule Team Borax might do a better job. I personally have not used them in this application. If it were me, I'd dump both tanks, add 5-10 gallons of water to each, then the baking soda or Borax and drive to your next destination, so things slosh around. You ought to dump and take a look at the color of the effluent to see if you've removed anything. A clear plastic connector between the dump outlet and hose can be found at most any RV outlet. Be warned that regular addition of too much basic material can send the tank liquid pH too far from 7.0 and kill the beneficial waste eating bacteria.
I do advocate the use of Rid-X, which could be your regular maintenance.

Add 2 cap fulls to each tank after each dump. That is all I do.

Let us know how it goes.

Never baking soda, but recently I used a cup of Dawn and let it slosh around for a day and it worked great. I also have used Pine Sol and it worked. My sensors haven't worked this good in years.

However, that Pine Sol probably killed all the sludge eating bacteria in you tank. So there is a likelihood its cruding up all over again.
