I can only guess about your problem but I can tell you of my engine issues and the cause.
I had a Dodge that the Cummins started to cut out on the highway, and then it would come back. Then it would or would not start, depending on its mood. The third 'expert' that looked at it found a loose wire connector at the fuel shut-off valve and a squeeze with pliers fixed it.
It sounds to me that your coach runs well when it starts, so I would guess that all the basic systems are working properly. I would look at the electrical connectors that pertain to the fuel system at the engine, under the dash, solenoids etc. I would look for looseness or corrosion. My 2000 Magna is Cat powered, and I have fixed a few of my electrical issues just by pulling connectors apart and reconnecting them.
Intermittent problems are tough to find, I hope this helps.
