LP Tank Change?

Background:
We retained our Norcold 1200, adding the Amish Cooling Unit, extra fans, smoke detector and SS-30 Fire Extinguisher so that we could boondock for longer periods of time.
Since then, we've upgraded our house battery bank to 800AH of Lifelines, and a robust 1200W 48V Solar Panel system. On a recent four month trip that included a good mix of boondocking, we only ran the generator to either exercise it or for roof AC needs. We were usually fully charged by 11:00AM, or in partial shades by say 1:00PM. (This included some days of pretty heavy clouds too.)
What We're Considering Doing:
Change over to the Samsung residential fridge. We feel the battery bank and solar panel system will easily support this. The DW likes the larger size. And kind of a funny other plus - we'd have non Stainless Steel, so she could put up our travel magnets from the different places we visited so far. (She really likes to display these, and magnetic surfaces are few and far apart in our coach.)
So what? What is the question for this post?
If we go over to the residential fridge side. We'd only have the stove top and an additional LP outlet I added to support Heat Buddy demands on our LP tank. We have both an extended stay and also BBQ/Campfire In A Can subbed out valves in the LP bay too. But, I have a 10lb portable tank that I usually use for these duties.
On our coach, we have a 40 gallon Black and 60 gallon Grey. I've added a pump to shift Grey to Black, to add to the Grey tanks capacity. BUT, when I did this, I thought we had a 60 gallon Black (devils are in the details, and it was after about a years usage that I was so surprised to see the Black levels getting closer to full so fast, that I pulled out the manuals and read that the 2004 High Cascade 40' model had the 40 gallon Black!).
So my question (And thanks for reading all of this background and leadup!).
I'm thinking of removing the current LP tank, and going to a smaller size onboard tank (proper tank for RV usage, with proper valve and cutoff switch). I then think this will open up enough room in this bay to add an additional tank. I would change the Grey to Black tank pump over to feed this tank.
I recall that Dallas added extra water tanks to his Intrigue, using the half bay in front of where the stock tanks are installed. (Have not seen Dallas post for awhile, don't know if he still has his coach anymore. Always enjoyed seeing the mods he made to his rig!) So this would be similar but I would pump Grey to the tank installed in the LP area. I'd add a macerator pump permanently installed an easy access for the times this tank needs to be emptied.
Thoughts and opinions appreciated. I just see the need for LP dropping without the Norcold 1200 in the mix, and see this as an opportunity to add capacity to an area we're short on now:)!
