On my Atwood 10 gal heater, the thermostat and eco are held in place by 3 metal tabs. Just bend the tabs out slightly and the eco should pop out. There is a spring between the sensing element that is in contact with the tank and the back of the eco so that a better thermal contact can be made with the water heater. There will also be 'rubber' pad that has adhesive on it that will cover the two sensors.
If your eco has kicked out the propane side of your water heater you may have to reset the eco for the electric element before you can switch over to the electric element. On my coach the thermostat and eco for the electric element are on the back side of the water heater. The eco has a small reset button that will need to be pushed in if it has tripped.
