Need help... limp mode

so I have a 2004 42' Intrigue with a Cummins 400 ISL. It keeps going into limp mode. Once it gets around 196° on my Silverleaf display and I hit a hill it starts blaring the alarm and telling me to shut down the engine. Just changed the temp sensor, pressure washed the fins on the radiators and changed fuel filters multiple times. I'm so frustrated, can't go anywhere with my coach. Any thoughts? Has anyone experienced anything like this? Next thought is turbo, going to pull it off. Want to make sure carbon hasn't made anything stick?.

Don't have a Cummins I have a Cat, so I can't get into details but nothing should be screaming at you or doing anything at 196°. That's totally normal operating range for any big diesel.
